Introduction:

It appeared after a few years that we had the potential to produce wines distinguished by their qualities. Following the request from many customers, we finally worked on the production of this special wine.

It is difficult to reproduce a wine like this every year; for the simple reason that the necessary weather conditions are not always available. Nevertheless, the results have been more than encouraging, and it motivates us to constantly seek to obtain the highest quality wines.

Winemaking process:

- Harvest: mid to late September
- Harvested by hand in plastic boxes of 20 kg, whole grapes de-stemmed and crushed, and then put in thermo regulated stainless steel tanks
- Cold pre-fermentation maceration for about a week, alcoholic fermentation with indigenous yeasts followed by Malolactic fermentation
- Alcoholic fermentation: 4 weeks total
- Apparatus: 100% new, French oak barrels
- Maturation period: 25 months
- Kept in cellars 6 years before being placed on the market at the beginning in 2015

Tasting advice:
- Serving temperature: Decant into a carafe two hours before serving to allow it to open fully
- Store: 15-20 years
- Wine and food pairing: Excellent with red meat or sauce dishes

Tasting notes:
- Red cherries, dense with purple reflections
- Woody notes menthol and fresh spices; rich and complex.
- A beautiful entrance into the mouth; sweet, greasy, bulky and supported by a fine tannic structure, with ripe tannins
- The finish is on ripe fruit aromas (prunes).
- Very nice overall homogeneous ensemble, with a fantastic duration of fruits
