Origin of the name:

‘Perseides’ means the shooting stars observed around 12th August each year in Lebanon. Indeed, the ideal location of the castle at 1,300 meters above sea level, without fog or urban light pollution, allows patient enthusiasts to observe these shooting Stars. The name of this wine was born on the first night we witnessed this light display.

This wine comes from a rigorous selection of grapes representing the vintage particularity and is given the utmost attention during its development. It is a wine of great nobility, the result of all the love that the Khoury family brings to the vines. A wine made with passion for wine lovers!

Winemaking process:

- Harvest: - Harvested by hand in plastic boxes of 20 kg, whole grapes are de-stemmed and crushed, and put in thermo-regulated stainless steel tanks - Pre-fermentation, cold maceration for about a week, and by alcoholic fermentation with indigenous yeasts and Malolactic fermentation - Alcoholic fermentation: 4 weeks with indigenous yeasts - Apparatus: 40% in new barrels from different French producers and 60% in barrels less than one year - Duration of ageing: 18 months - Kept in cellar five years before being placed on the market in late 2012 Tasting advice: - Serving temperature: Decant into a carafe two hours before serving to allow it to open fully - Store: 20 years - Wine and food pairing: Excellent with raised meat: beef, lamb, game; as well as cheese from raw milk. Tasting notes: - Deep, dark garnet color - Slightly closed nose shows notes of undergrowth - In the mouth, an open and pleasant attack quickly grows with ripe notes of Sichuan pepper and red pepper - Beautiful, outstanding length. - This wine has great potential that will reveal its true nature to those who are patient enough!
