Introduction:
The particular climate of Lebanon allows us to very easily produce sweet wines, typically during fresh years. The grapes are kept on the plant until they turn into raisins before being harvested.

Winemaking process:
- Harvest: August
- Grade raisins on the vine
- Harvested by hand in plastic boxes of 20 kg, pressed, and then partial alcoholic fermentation in thermo-regulated stainless steel tanks, and finally stopped by cold and alcohol injunction fortification
- Alcoholic fermentation: 2 weeks
- Apparatus: stainless steel tanks
- Maturation duration: 8 months
- Bottled in May and then rested for at least 24 months in the cellar before selling
Tasting advice:
- Serving temperature: 8°C
- Store: as long as your patience can handle!
- Wine and food pairing: sufficient on its own, it is excellent as an aperitif; but can also be paired with foie gras or blue cheese, as well as being ideal after a meal, especially with chocolate desserts
Tasting notes:
- Rich looking yellow and gold colored wine
- The nose is clear and open and you can immediately feel the aromas of acacia honey and white flower
- On the palate we can find hints of subtle aromas of pear and apple
- The final ends with a great impression of dried apricot and caramel
